Energy bites are great as a snack and on the go. They are extremely versatile and the mix-in possibilities are endless. These pineapple and coconut energy bites have a refreshing tropical flavor, perfect for the spring. Adding chia seeds, flaxseed meal, and protein powder adds extra fiber and nutrient-dense properties such as fiber, minerals, vitamins, and omega-3s. The latter being extremely beneficial as they have powerful anti-inflammatory properties.
I find these bites a lot of fun to make with the kids. My kids always like to help in the kitchen, so whenever I'm making something that can be potentially fun (and safe), I always enlist their help. In the past, I've considered using fresh fruit in these energy bites. I'm afraid the bites won't last as long and the consistency will be significantly different. Using dried fruit allows to keep the energy bites fresh longer, so stick with dried fruit. Just make sure when storing these bites you use an airtight container.

Pineapple Coconut Energy Bites
Makes 35 energy bites
1 cup pitted dates
1/2 cup chopped dried pineapple rings
2/3 cups raw sunflower seeds
2/3 cup raw cashews
1/3 cup chia seeds
1/3 cup flaxseed meal
1/3 cup shredded coconut
2-4 tablespoons water
pinch salt
Put all the ingredients into a food processor and pulse until the mixture comes together. Initially use only 2 tablespoons of water and add more if needed, just until the mixture comes together.
Transfer mixture to a large mixing bowl and roll into balls. Store in an airtight container in the refrigerator.
