Meyer Lemon Pizza Recipe

Crazy… maybe. Delicious…absolutely!


That's how I feel about my new favorite pizza! You'll never believe me when I tell you that I've added lemons as a topping. That's right, lemons. Now, I know what you're thinking—Why would you ever put lemons on a pizza? Why not is the better question? These aren't just your ordinary lemons we're talking about; these are Meyer lemons. Sweet and citrusy with a soft, thin skin that only becomes sweeter and softer when baked.


Meyer lemons are to die for, and I was lucky enough to be gifted a bag of them, picked fresh off the tree. I knew I had to do something special with these lemons, something unpredictable; after all they only come around once a year. It was one afternoon when I was feeling a little adventurous and impulsive when I came up with the genius idea to add them on a pizza.



This pizza is kind of mind-blowing and will definitely take your palate on a new voyage. Mozzarella, goat cheese, Meyer lemons, and rosemary—I bet you have probably never attempted that combo. I'm telling you, it's worth a try! The key is to slice the lemons very thinly before placing them on the pizza to bake. Unlike other lemons, sweet Meyer lemons have a thin enough skin that allows you to eat them, rind and all. The rinds give this pizza a pleasant tang. Throw in rosemary and goat cheese and you have the perfect earthy balance to your tangy lemons.


To make things even crazier, I didn't add any sauce to the pizza. Just a simple drizzle of olive oil on the dough before sprinkling with cheese, and you're good to go. You wont even miss it. I promise! There are so many intense flavors going on that there's no need for them to battle it out with a heavy sauce.


This is the freshest pizza, both literally and figuratively, that you'll ever come across. So when life gives you lemons, make pizza!



Dough:

1 1/2 cups lukewarm water

1 1/4 tablespoons yeast

1 1/4 tablespoons of salt

3 1/4 cups flour​

pinch of sugar


Toppings:

Olive oil

2 1/2 cups mozzarella cheese

2 small Meyer lemons, thinly sliced

2.5 ounces goat cheese

2 tablespoons fresh rosemary, coarsely chopped

1/2 teaspoon salt


To prepare the pizza dough place water in a bowl and sprinkle with the yeast and a pinch of sugar. Allow the mixture to sit for about five minutes until yeast starts to activate. Meanwhile in a large bowl, mix together the flour and salt. Add the yeast mixture and stir until the dough is smooth.


Remove the dough from the bowl and divide in two if you are making two pizzas. Shape


the dough into balls and place them in an oiled bowl, being sure to lightly oil the top exposed portion of the dough before covering with a damp cloth. Let rise for two hours at room temperature.


Place a pizza stone or pan in the oven while preheating to 400 degrees F. If you are making two pizzas, divide the ingredients accordingly. Pat down your dough and shape into a circle. Drizzle a thin layer of olive oil over the dough and spread evenly. Sprinkle with mozzarella cheese and layer with lemon slices. Scatter pieces of the goat cheese evenly across the pizza. Top with chopped rosemary. Sprinkle the entire pizza with the salt. Bake for 14 to 16 minutes until the crust is golden brown and the cheese is melted.
