Slow Cooker Thai Chicken Noodle Soup

We have a love of Thai food in our house. I drool a bit when I think of sticky rice....I used to eat it by the handfuls when we had an exchange student from Laos living with us. She would cook us yummy Laotian and Thai food. And so for a long time I've wanted to bring some of those Thai flavors to my own family (and eat handfuls of sticky rice again!).


This recipe is so simple, but so very delicious. The best part about it—it cooks all afternoon in the slow cooker so you can enjoy the smell but there isn't a lot of prep work! It's also perfect for a party and will impress your guests into thinking you were cooking all day—wink, wink. It's one of those great healthy recipes to add to your weekly menu. I promise!


Thai Chicken Noodle Soup in the Slow Cooker


Serves 8

315 calories per serving


3 skinless chicken breasts

1 package rice noodles

6 cups of chicken stock (homemade or store-bought)

2 cans of coconut milk

1 jalapeno (cut in half and de-seeded)

4 tablespoons soy sauce (fish sauce works too)

3 teaspoons minced garlic

1 teaspoon onion powder

3 teaspoons ground ginger

1 medium red bell pepper, diced

2 limes

Fresh cilantro

Fresh basil

Red pepper flakes​


Put chicken breasts, chicken stock, coconut milk, jalapeno, soy sauce, garlic, onion powder, and ginger in the slow cooker and cook on high for four hours.


Take out the jalapeno pieces. Remove the chicken breasts and cut them into bite-sized chunks. Return the chicken pieces to the soup. Add one package of rice noodles and one diced medium red bell pepper. Cook for an additional 20 to 30 minutes.


Serve with cut up limes to squeeze in, fresh cilantro, fresh basil, and red pepper flakes all so each member of the party can make his/her soup just the way they like it.


This soup is so delicious it will become a staple in your house! It certainly has in ours. Even the pickiest eater in our family gobbles up the noodles (he doesn't do brothy soups) and loves it! It is a crowd pleaser.
