Easy One-Pot Sesame Chicken
One (3-5 lb) roasting chicken, rinsed, legs tied together
1/4 cup dark brown sugar
1/4 cup soy sauce
2 garlic cloves, minced
3 cups vegetables
Mix everything but the chicken and veggies together in a bowl, and then liberally rub the sauce all over and inside the chicken in a roasting pan or cast iron skillet.
Tip! Tying the legs of the chicken together will help it cook evenly.
Surround the chicken with the vegetables so the drippings make them all tender and delicious. Vegetables that are usually tender (like peas or cauliflower) will end up extra soft. If you don't prefer that taste, opt for firmer veggies, like carrots or bell peppers.

Roast the chicken, breast-side up, at 400 degrees F for 30 minutes. Flip the bird over and cook for another 30 minutes until the skin is dark and crispy. Using a turkey baster, drip the juices back over the chicken every 10 minutes or so to help guarantee a perfectly-cooked bird.
