Cantaloupe Lime Popsicles

If there's one fruit my children could survive on all summer, it would be cantaloupe. Between the two of them, a freshly sliced melon has no hope of surviving more than two hours in my house. It will be devoured in record time. Perhaps its only competition is the lychee, but given cantaloupe's availability, well, it's safe to say we go through a lot of melons in our house.

I've been wanting to make cantaloupe popsicles for quite some time, so I finally wised up and bought a bag full of melons. I was able to stash one away just so I can surprise the kids with their favorite melon in frozen form.


The look of surprise when they opened the freezer was classic. "Mom! What flavor is that??" they squealed when they spied the frosty orange pops. They could barely wait to let the cantaloupe lime popsicles come to a full freeze.


These popsicles are the perfect way to cool off on a hot summer day. And with lots of summer still ahead, I'll be making more of these for my little cantaloupe lovers.



Cantaloupe Lime Popsicles


Makes 10 popsicles


Simple Syrup:

1/2 cup water

1/2 cup sugar


Combine the water and sugar in a small sauce pan. Bring to a simmer. Once the sugar is dissolved, remove from heat and cool.


Popsicles:

1 ripe cantaloupe, seeded, peeled, and cubed

Juice of half a lime

1/4 cup (or more) simple syrup, to taste


In a blender, combine cantaloupe, lime juice, and simple syrup, to taste. Err on the side of sweetness as when the popsicles freeze, the sweetness diminishes. Blend until smooth.


Strain the mixture and pour into your popsicle molds, leaving about 1/2 an inch from the top of the molds. Cover and place in the freezer. Meanwhile, soak wooden popsicle sticks in


warm water (this will help prevent them from floating when you insert them). After two hours of freezing time, insert the sticks in the slushy popsicles. Continue to freeze for four hours or longer, until completely frozen.


Rinse the molds for 30-60 seconds under running hot water to loosen the popsicles. Un-mold and enjoy!
