Summer is arriving and ripe avocados are flooding the grocery stores! It's time to start dusting off your favorite summer avocado recipes and time to start making new favorites, like this recipe for a fresh and tasty Avocado Salad.

With their buttery and smooth texture, avocados are great compliments to a variety of dishes including salads, soups, and salsas or as an accompaniment to your favorite Mexican dish. And sometimes the very best way to serve them is as the main star like in this recipe.

Some of my favorite salads are ones that are uncomplicated, but still flavorful. That's exactly why this recipe is such a winner in our home. Who knew that just a handful of ingredients could taste so good together!

If I am using my avocados on the same day I buy them or even the following day I like to pick them slightly soft with a dark skin color. I make sure they do not have any visible bruises or recessed spots. You can also purchase your avocados on the firmer side, with a much lighter green color, and let them ripen in a paper bag or on your counter for a few days.


It's hard to go wrong when using fresh avocados and this salad is a perfect side for any BBQ or as a refreshing and simple healthy lunch. Since avocados are creamy in nature the acid from the lime not only helps it keep their bright green color but also serves to balance out the rich texture and taste. By adding a touch of chili powder to the sliced avocado it adds an unexpected kick along with the salty flavor of the cheese. Be careful, this might just become your new addiction!



Avocado Salad


Serves 2-4


Ingredients:


2 large avocados

1 lime, juiced

1/8- 1/4 teaspoon chili powder

1/4 teaspoon of salt

3 tablespoons Cotija cheese or feta cheese, crumbled

3 tablespoons fresh chopped cilantro


Method:


To prepare your avocado begin by cutting it lengthwise. Grab a hold of both halves and twist them in opposite directions until separated. Remove the seed and with a large spoon scoop out the flesh. Slice the avocado into long strips and arrange onto a plate or platter. Squeeze the lime over the avocado and sprinkle with the chili powder and salt. Crumble cheese over avocado and sprinkle with fresh chopped cilantro. Serve immediately.
